After nearly two years of learning, experimenting and refining our process, we’re proud to share the first spirits from Bremer Valley Agave.
Two small, individually numbered batches of 100% Australian Agave Spirit, handcrafted from wild Agave americana growing across the Bremer Valley.

Batch: HB 1.1
100% Agave Spirit | Capón
45.6% ABV | 500ml
76 Bottles
Wild, hand-harvested Agave americana, capóned and left in the field for six months to mature through the Australian summer.
Once harvested, the agaves are hand-cut and slowly cooked in hand-dug earthen pits using Australian native hardwoods from the property and locally sourced stone. Cooked underground for approximately one week, the heat and smoke gradually work through the plant, developing further character and depth.
HB 1.1 was cooled and rested for two days before being shredded and fermented for 21 days.
Distilled in a small batch and bottled exclusively as HB 1.1 — 76 individually numbered bottles.
